Personally, I use emacs, as all of its shortcuts allow you to write/edit documents a lot faster than things like overleaf or TeXStudio. That said, its pretty horrible to start out with (though there is the option of writing LaTeX using org-mode, which makes a few things somewhat easier).
LyX is probably the most beginner-friendly option (it's what I started with, too), as you can do a lot of things using its graphical interface, should you forget the LaTeX commands.
